pinch of turmeric
1/4 tsp cumin seeds
Salt to taste
2 tbsp oil
Cilantro to garnish
Process:
2 medium sized green capsicums/ Bell peppers (you may use combination of green and red capsicums like I did)
1 medium onion chopped
1/4 cup roasted peanuts
1 tbsp cumin pwd
1/2 tsp red chilli pwd (adjust)
pinch of turmeric
1/4 tsp cumin seeds
Salt to taste
2 tbsp oil
Cilantro to garnish
Process:
- Discard the seeds of the capsicum and chop it into small pieces.
- Coarsely grind the roasted peanuts and keep it aside.
- Heat oil and add the cumin seeds and fry for 30 secs.
- Add the chopped onions and fry them till they turn translucent.
- Add the chopped capsicum along with salt, turmeric and red chilli pwd.
- Cover and cook on medium till the capsicum is half cooked.
- At this stage you not need to add water as the capsicum oozes a lot of water while cooking.
- When it is half cooked add the cumin pwd and now if required you may add half cup of water.
- Adjust salt and cover and cook till the capsicum is completely done.
- Lastly add the peanut pwd, mix well and cook uncovered for 2 mins.
- Switch off the flame and garnish with cilantro.
- This taste great with plain rice and pesarakattu.
Happy Tummy :-)
