Ingredients:
3 big potatoes
1 large onion
2 large tomatoes
1 tbsp ginger garlic paste
2 tbsps cashew nuts/ground nuts
1/2 tsp cumin seeds
2 green chillies (adjust)
1/2 tbsp chilli pwd (adjust)
1 tbsp coriander pwd
1 tbsp cumin pwd
1 tsp garam masala pwd
salt to taste
few curry leaves
1 tbsp oil
cilantro to garnish
Process:
- Boil the potatoes, peel the skin, cut into cubes and keep them aside.
- Grind the onions, tomatoes, green chillies, cashew nuts/ ground nuts all together into a smooth paste.
- Heat the oil in pan. Once it is hot add the cumin seeds and let them crackle.
- Add the curry leaves, ground paste, turmeric pwd, coriander pwd, cumin pwd, garam masala pwd, red chilli pwd and salt.
- Cook the mixture till the raw smell goes off and the oil starts to ooze out.
- Then add the potatoes, cup of water. Cover and cook it for 5 mins.
- Adjust salt, switch off the flame and finally garnish with cilantro.
- This goes great with any flavored rice, roti's or even plain rice.
