Beerakaya Iguru (Simple Ridge Gourd Curry)




Ingredients:

2 ridge gourd (peel the skin and cut into cubes)
1 medium sized onion chopped
2 green chillies slit
3-4 garlic pods (slightly crushed)
1/2 tsp red chilli pwd (adjust)
1/4 tsp turmeric
1 tsp coriander pwd
1 tsp cumin pwd
1/4 tsp cumin seeds
1/4 tsp mustard seeds
salt as needed
1 red chilli
few curry leaves
1 tbsp oil
cilantro to garnish


Process:


  • Heat oil and once it is hot add the cumin seeds, mustard seeds, red chilli and garlic. fry them for 2 mins.
  • Add the chopped onions, green chillies, curry leaves and fry them till the onions get cooked.
  • Next add the chopped ridge gourd pieces along with salt and turmeric pwd. Cover and cook on medium for about 8 mins.
  • Add the red chilli pwd, coriander pwd, cumin pwd and a cup of water.
  • Adjust salt. cover and cook further 10 mins or till the ridge gourd is completly cooked.
  • Add the chopped cilantro and switch off the flame.
  • Serve hot with rice, roti.
