Ingredients:
3 Eggs (Boil and remove the shell)
1 medium sized onion chopped
2 green chillies slit
Small lemon sized tamarind
1/2 tsp red chilli pwd (adjust)
1/4 tsp turmeric
1/4 tsp cumin seeds
1/4 tsp mustard seeds
salt as needed
few curry leaves
1 tbsp oil
cilantro to garnish

Process:
- Boil the eggs, remove the shell and make slits length wise and keep them aside.
- Soak tamarind in water and squeeze the juice. Alternately you can also microwave the tamarind with some water and once it is cooled squeeze the juice and keep it aside.
- Heat oil and add cumin seeds, mustard seeds, curry leaves and green chillies.
- Fry them till the curry leaves turn crisp and add the chopped onions.
- Fry the onions till they turn translucent.
- Add salt, turmeric, red chilli pwd along with tamarind extract and a cup a water.
- Let it come to a boil and add the eggs.
- Cover and cook for a good 15 mins.
- Switch off the flame and garnish with cilantro.
- Serve hot with rice.
