Ingredients:
1/2 kg Indian broad beans (Chikkudikaya)
4 large garlic cloves (or 6 medium sized cloves)
3 dry red chillies
1 tbsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp urad dal
1/2 tsp bengal gram dal
1/2 tsp red chilli pwd (adjust)
pinch of turmeric
Salt to taste
5 curry leaves
1 tbsp oil
Process:
- Cut the broad beans into an inch pieces and wash them
- Microwave the beans with a splash of water on high for 5 mins (doing this will reduce the cooking time)
- Grind the garlic cloves, red chillies and half of the cumin seeds coarsely without adding water.
- Heat oil and add the dals and fry till they turn brown
- Add the cumin seeds, mustard seeds and curry leaves and fry till the curry leaves turn crisp
- Now add the ground mixture and fry for 2 mins till the raw smell of garlic is completely gone.
- Add the half cooked beans along with salt
- Cover and cook on medium for 5 mins
- Add turmeric, red chilli pwd and again cover and cook till it is done
- Once done cook it for another 3 mins on high without cover (this step is optional but it will give a little crispiness to the beans)
- Once done switch off the flame
- Serve it as a side with rasam, sambar for rice.
