Kodiguddu Endu Royyalu Iguru (Eggs With Dried Prawns)



Ingredients:

4 Eggs boiled and peeled

1 Cup dried prawns
1 Big onion chopped
2 Green chillies slit
1 Tsp ginger garlic paste
1/2 Tsp cumin seeds
Turmeric a pinch
Red chilli pwd (according to taste)
Salt (according to taste)
1 Cup water
2 Tbsp's oil

Process:



  • First wash dried prawns and soak them in water for 10 mins. After 10 mins filter the water and keep them  aside. 
  • Add 1/2 tsp oil in a pan and fry the prawns till they turn golden brown and remove them. With the oil left in the pan, fry the boiled eggs with a pinch of turmeric, remove them and keep them aside. 
  • Add the remaining oil in a pan and add cumin seeds and let them splutter. Then add the slit green chillies and chopped onions and fry them till the onions turn golden brown and add the ginger garlic paste and fry for 2 mins till the raw smell is gone. 
  • Add the fried prawn, eggs, turmeric, red chilli pwd and salt according to taste and add a cup of water. Cover and cook till the desired gravy consistency, garnish with cilantro. Switch off the flame.
  • Serve with rice or roti.
