Cabbage Dal (Cabbage pappu)
Ingredients:
1 Cup toor dal
3 Cups chopped cabbage
1/2 Medium sized chopped onion
3 Green chillies slit
1 Tomato chopped
Small lemon sized tamarind
3-4 Garlic cloves slightly crushed
Few curry leaves
1 tsp chana dal
1 tsp mustard seeds
1 tsp cumin seeds
2 Dry red chillies
1 tsp red chilli pwd (adjust)
1/4 tsp turmeric pwd
Salt to taste
2 tbsp oil
2 1/2 Cups of water
Process:
- Wash the toor dal, drain the water and keep it aside.
- Into a pressure cooker take the washed toor dal, chopped cabbage, onion, tomatoes, slit green chillies, tamarind along with 2 and half cups of water.
- Pressure cook this for 3-4 whistles.
- Once the pressure is off open the cooker and discard the tamarind.
- Into a cooking pan take 2 tbsp of oil and once it is hot add the chana dal, mustard seeds, cumin seeds, dry red chilly, crushed garlic cloves, curry leaves and fry for a minute.
- Then add the cooked dal, red chilli pwd, salt, turmeric.
- Now add some water depending on how thin you want your dal.
- Cover and cook for 5 mins on medium flame.
- After 5 mins check for the consistency of the dal, adjust the seasoning.
- Switch off the flame and serve hot with rice or roti.

Simple Sweet Puffs (Dil pasand)
Ingredients:
Puff pastry sheets (frozen, store brought)
5 tbsp tutti fruti
3 tbsp freshly shredded coconut (frozen is fine too)
3 tbsp sugar (adjust)
1/4 tsp cardamom pwd
Process:
- Thaw the puff pastry sheets for 30 mins.
- Add shredded coconut to a pan and fry it for a minute.
- Add sugar and keep mixing it, so that the sugar melts and coats the coconut well.
- Add in the tutti fruit and cardamom pwd
- Mix well, switch off the flame.
- Let it cool completly and then fill in the pastry sheets with this filling.
- You may close the sheets in any shape.
- preheat the oven at 400 degrees farenheit.
- Now bake these puffs for 10-15 mins.
- Mine took exactly 12 mins,
NOTE: If you cannot get hold of tutti fruti, you can use chopped raisins and dates.

Capsicum/Bell peppers Masala Rice
Ingredients:
1 Cup raw rice
2 medim sized bell peppers/capsicum (de-seeded and cubed into 1" inch pieces. You may use any colored bell peppers, i used red and green)
1/2 medium onion chopped
1/2 tsp cumin seeds
Salt to taste
2 tbsp butter/ghee/oil
To make into coarse pwd:
4 dry red chillies (adjust)
1 tbsp urad dal
1/2 tsp mustard seeds
1 tsp cumin seeds
1 tbsp coriander seeds
3 tbsp peanuts
8 curry leaves
Process:
- Wash the rice and cook it.
- Heat a pan and dry roast peanuts and keep them aside.
- In the same pan add the red chillies, urad dal, cumin seeds, mustard seeds, coriander seeds and dry roast them on medium till the urad dal changes color and that is when we add the curry leaves and fry for 1-2 mins and switch off the flame.
- Cool them completely and grind them into a coarse mixture along with the peanuts.
- Heat butter/ghee or oil in a pan and add the cumin seeds.
- After cumin seeds splutter add the chopped onions and fry till they change color. (do not add too much onions, as we do not want the onions flavor to over power the flavor of the capsicum)
- Next add the cubed bell peppers, salt and fry them for 3-4 mins (do not wait till they turn very soft. we want little crunchiness to the capsicum pieces)
- Add the masala pwd and mix well and cook for a minute.
- Then add the cooked rice, mix well.
- Adjust salt, and let it sit on medium for 1-2 mins.
- Switch off flame and serve hot with chips on the side.

Lemon Rasam
Ingredients:
3 tbsp toor dal cooked
2 green chillies slit
2 medium sized tomatoes
1 tbsp lemon juice (adjust)
pinch of turmeric
1/8 tsp hing/asafoetida
500 ml water
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 dry red chillies
1 tsp oil
Few curry leaves
Cilantro to garnish
Process:
- Blend the tomatoes to a puree.
- Take the tomato puree into a vessel along with the water, turmeric pwd, salt, slit green chillies and a pinch of asafoetida.
- Put the vessel in high heat and once it starts boiling reduce to medium heat and let it boil for 5 mins.
- Add the cooked toor dal (you can add any water left while cooking the dal) along with curry leaves.
- Bring it to a boil and let it boil for 2-3 mins.
- In another pan take the oil and once hot add the cumin seeds, mustard seeds, dry red chillies along with the remaining asafoetida and let the mustard and cumin seeds crackle.
- Immediately add this tempering to the rasam and cover it.
- Do not remove the cover for atleast 10 mins (doing this will incorporate the tempering flavour into the rasam).
- After 10 mins add the cilantro and lemon juice (add the lemon juice according to the taste. You may check the taste adding little by little at a time)
- Serve with rice along with papad or any fry.

Simple Chicken Curry
Ingredients:
1 pound chicken
2 medium onions chopped
2 green chillies slit
1 tbsp ginger garlic paste
1 tsp red chilli pwd (adjust)
1 tsp coriander pwd
1 tsp cumin pwd
1/2 tsp garam masala pwd
1/4 tsp turmeric pwd
salt to taste
1/2 tsp cumin seeds
1 spring curry leaves
2 tbsp oil
cilantro to granish
Process:
- Cut the chicken pieces. Wash 2 times with water and finally one time with turmeric water to remove any impurities.
- Heat oil and add cumin seeds, curry leaves and fry till the curry leaves turn crisp.
- Add the chopped onions and slit green chillies and fry till onion turn transparent and little brown.
- Add the ginger garlic paste and fry for 1-2 mins till the raw smell goes off.
- Next add the chicken pieces along with some salt and turmeric pwd.
- Cover and cook on medium for 5-8 mins.
- Add a cup of water along with coriander pwd, cumin pwd, red chilli pwd, garam masala pwd.
- Adjust salt and again cover and cook till the chicken is completly cooked and you get the desired gravy consistency.
- Switch off flame and garnish with cilantro.
- Serve with rice, rotis or any pulao's.
NOTE: Add water in the curry depending on the amount of gravy you want. If you like bit watery gravy to mix it with rice add more water and if you want thick gravy add less water.
