Kakarakaya Fry (Bittergourd fry)



Ingredients:

4 Bittergourds

1 large onion sliced
3 Green chillies slit
1/2 tsp red chilli pwd (adjust)
1/4 tsp turmeric
Salt to taste
1/2 tsp chana dal
1/2 tsp urad dal
1/4 tsp cumin seeds
1/4 tsp mustard seeds
3-4 dry red chillies
Few curry leaves
2 tbsps oil


Process:



  • First wash the bitter gourd, peel the skin and cut them into rounds.
  • Heat some water and add salt to it and let the water come to a roaring boil. Switch off the flame and add the bitter gourd pieces, cover it and keep it aside for 10 mins. Then squeeze the water out of the pieces and keep them aside (this reduces the bitterness to some extent)
  • Add oil to a pan and once it is hot, add in the chana dal, urad dal and fry till they turn golden brown. Then add the mustard seeds, cumin seeds, curry leaves, dry red chillies and fry them for a minute.
  • Add the slit green chillies and onions and fry them till the onions turn golden brown.
  • Then add in the bitter gourd pieces, salt, turmeric and mix well. Cover and cook till the bitter gourd pieces turn soft and gets cooked.
  • Then add the red chilli pwd. Mix well and let it cook on medium high flame without covering for another 5 mins and switch off the flame.
  • Serve hot with rice.
